Done right, harvesting maple sap is sustainable in eternity. The trees stay standing, producing sap generation after generation, without the "help" of agri-chemicals. And what goodness they produce! Raw, natural maple syrup is one of food's greatest pleasures. Now, an upstart company from Vermont is expanding maple's applications to include delectable sweeteners like wafers, cubes, creams and flakes. The Tonewood Maple Flakes can be used as a naturally sweet topping for salads, fruit, and even meat.
"It is the perfect natural sweetener," Tonewood founder Dori Ross tells Cool Hunting. "It is low on the Glycemic Index, high in minerals and antioxidants. It is also a low calorie sweetener and you only need a bit as it is sweeter than refined sugar."
